Luke Shorter, our dedicated Eat Fresh chef, talks about why Veganuary is a great time to get started with recipe box cooking.

What was the inspiration behind these new recipes?
We wanted to focus on post-Christmas food trends, using ingredients that are good for the body and soul to help kick out those winter blues. 

Why do you think January is the perfect time to join Eat Fresh?
It’s a new start and can provide a fresh approach to many areas of your life and how you fuel your body. This can make a huge impact and help you kick start a change for the better.

What are your thoughts on recipe boxes?
I really don’t understand why they haven’t been around long - the closest thing for a long time was Meals on Wheels. But now the ready-made-kit concept is appealing to a young market. Food is as popular as ever and food knowledge is becoming more important, the opportunity to learn professional techniques and make restaurant quality food at home is a big draw.

What are your favourite 3 ingredients to cook with and why?
Flavouring with citrus (lime, lemon etc) - love a sourness. Also, what I like to call the Holy Trinity - chilli, ginger and garlic make a great basis for any Asian style dish which is my passion.
