Sherry is going through something of a revival at the moment - and with good reason. It’s a surprisingly versatile drink making it an excellent contender to become your new summer drink of choice this year. Sherry is most commonly known for being very sweet, but it can also be very dry, crisp and even come in varieties that have more in common with a vintage Champagne or whisky. Where does sherry come from?


Sherry comes from The Sherry Triangle - a particular area of Andalucia in Spain. The area is known for its hot climate - it has around 300 days of sunshine a year - but it’s the striking white soil that’s found here (called Albariza) which makes growing grapes possible thanks to its water retaining properties. 


The area is made up of Sanlúcar de Barrameda, El Puerto de Santa María and Jerez, the latter being the hometown of Tio Pepe, the beloved uncle of Manuel Maria Gonzalez, founder of the Gonzalez Byass Sherry company. 


Did you know?

All sherry is fortified, giving it an alcohol level of at least 15%, and nearly all sherry is non-vintage with a blend of different years’ harvests. 


What foods go well with sherry?

Sherry is a great accompaniment to food. Pair sweeter varieties with desserts - Pedro Ximénez is delicious poured over vanilla ice cream. 


For those that prefer a drier sherry, styles like Tio Pepe Fino work wonderfully with tapas - dry sherry is often enjoyed with olives, Manchego cheese and jamon to a background of Flamenco in its hometown of Jerez. 


Sherry also makes an excellent ingredient in a long drink - mix it with mint, ice and lemonade to enjoy a classic Rebujito. 


Sherry Cocktail 

Sherry is often a favourable choice in cocktails thanks to its lower alcohol content when compared to spirits. If you want to explore the wonderful world of sherry and all its possibilities, take a look at the great selection of sherry cocktail recipes below:


Sherry Cobbler

You will need:

  • 2 ½ oz Fino Sherry
  • ½ oz lemon juice
  • ½ oz simple syrup
  • ½ oz passion fruit juice
  • 2 dash angostura bitters  

Build and stir your cobbler in a highball glass and serve with red berries and mint. 


Bamboo

You will need:

  • 1 ½ oz Fino Sherry
  • 1 ½ oz White Vermouth
  • 2 dashes lemon bitter

Quickly stir your ingredients and strain into a coupette glass - serve with lemon peel. 


Camomile Martini

You will need:

  • 1 ½ oz The London No.1 Gin
  • 1 oz Fino Sherry
  • ½ oz  honey water
  • ½ oz fresh lemon juice
  • 1 oz strong camomile tea
  • 2 sprigs of lemon thyme 

Shake and double strain this cocktail into a Martini glass, and serve with a burned lemon thyme sprig.
